Honey found in the supermarket is not raw honey but rather pasteurized (heated to 150 degrees or more, followed by rapid cooling). This heating process slows down crystallization so that the honey remains a clear liquid, is easier to bottle and looks more appealing on the shelf. However, when honey is heated to high temperatures most of its health benefits are lost as the natural yeasts and enzymes are destroyed.
Raw honey is characterized by “cloudiness” and a tendency to crystallize to a thick consistency after a few months. It is wonderful as a spread or dissolved in hot beverages. Raw honey is an excellent source of antioxidants, supplies a full spectrum of vitamins and minerals and contains pro-biotics that can aid digestion. In addition, raw honey has powerful anti-microbial and anti-inflammatory properties that make it effective as a topical treatment for burns and minor skin wounds. It has been shown to be as effective in soothing cough and sore throat as treatment with Dextromethorphan. Most interestingly, raw honey is gaining recognition as a powerful auto-immune booster that can help those with seasonal allergies. Locally produced raw honey, which contains pollen of the allergy-producing plants, taken in small quantities on a daily basis may reduce or even eliminate seasonal allergy symptoms.
